Frozen Berry Nut Parfait
I don’t know about you but when I’m hungry yogurt and parfaits really do the trick. Next time you have a taste for something cold and good try this recipe for a FROZEN BERRY NUT PARFAIT.
Ingredients:
- 1 cup plain fat-free Greek yogurt
- 1/2 cup fresh blueberries
- 1/3 cup diced frozen strawberries
- 1-2 packets Truvia or natural sweetener
- 2 tsp pure vanilla extract
- 1/4 cup chopped walnuts, toasted
Directions:
- Process yogurt, berries, sweetener and vanilla extract in food processor until smooth. Stir in nuts.
- Transfer mixture to pint-size container. Cover and freeze about 30 minutes or until just set. Scoop into 4 parfait glasses and serve immediately.
NOTE: Dessert can be served later, but may form ice crystals if left frozen longer and won’t be as creamy.
