Low-Cal Cannoli Cones (or Dip)

cannoliI picked this recipe up from “The Healthy Weigh,” a nutrition class and program I attended through Cooper Hospital and its nutritionist, Angela Shaw, DTR. I couldn’t believe that the end result tasted as good as it did using cottage cheese (which I usually don’t like). But this is totally great and makes a great dessert.

Ingredients:

  • 6 sugar cones or waffle bowls broken into pieces (like chips for dip)
  • 1 cup plus 2 tbsp fat-free whipped cottage cheese
  • 2/3 cup Cool Whip Free, thawed
  • 2 ½ tbsp. Splenda No-Calorie Sweetner
  • 2 tbsp. mini semi-sweet chocolate chips divided into halves
  • 1 tbsp. Jello brand sugar-free fat-free vanilla instant pudding mix
  • 1 tbsp. powdered sugar

Directions:

Place all ingredients (except the cones and chocolate chips) in a medium bowl. Using an electric mixer, beat remaining ingredients on high until mixture is fully combined and fluffy. Fold in one-half of the chocolate chips (approximately 1 tbsp.). Carefully transfer mixture to a large plastic bag, squeezing it toward one bottom corner of the bag. Cut the very end of the bag with scissors so you have a makeshift piping bag. Squeeze mixture into cones evenly and sprinkle remaining chocolate chips on top. Enjoy. Makes 6 servings.

You can also place the finished mixture in a bowl and serve as a dip with the broken pieces of the waffle bowl as the “chips.” Makes a great party food!

Great DETERMINED TO SUCCEED tip: This dish makes a great dessert that’s only 134 calories per serving! However, if you like this recipe don’t try making a double batch at once. This recipe apparently doesn’t lend itself well to doubling-up ingredients.
