Perfect Holiday Pumpkin Squash Bake
I picked this recipe up from “The Healthy Weigh,” a nutrition class and program I attended through Cooper Hospital and its nutritionist, Angela Shaw, DTR. I tasted this just recently and it is delicious, especially warm!
Ingredients:
- 1 package cut up butternut squash (found at your local store)
- 1 jar pumpkin butter (or less)
- 1 cup apple cider or apple juice
Directions:
Pre-heat oven to 400 degrees. Mix all ingredients until squash is well-coated. Spray pan or glass dish with non-stick oil, pour ingredients in and bake in center of oven for 45 minutes or until squash is fork tender. Enjoy!
Great DETERMINED TO SUCCEED tip: This is great at parties and holiday family get-togethers. You can also add diced skinned apples, raisins, craisins and/or chopped walnuts depending on your taste to add different healthy flavors to this great holiday treat.
