Sweet Pepper Chicken Sandwich

Ingredients:

  • 2 slices whole grain bread (toasted)
  • 1 Tbsp yellow or spicy mustard
  • 1 large leaf romaine lettuce
  • 3 oz. lean low-sodium sliced chicken breast
  • 1/2 roasted red bell pepper, cut into strips
  • 1/4 cup shredded reduced-fat Mexican four-cheese blend

Directions:

  • Spread mustard on one piece of toast
  • Add lettuce, chicken, bell pepper and cheese. Place under broiler or in toaster oven and cook 20-30 seconds, or until cheese is melted to taste.
  • When done heating, top with second piece of toast and serve immediately while hot.
