Sweet Pepper Chicken Sandwich
Here’s a quick and easy sandwich recipe you can do both at home and work.
Sweet Pepper Chicken Sandwich
Ingredients:
- 2 slices whole grain bread (toasted)
- 1 Tbsp yellow or spicy mustard
- 1 large leaf romaine lettuce
- 3 oz. lean low-sodium sliced chicken breast
- 1/2 roasted red bell pepper, cut into strips
- 1/4 cup shredded reduced-fat Mexican four-cheese blend
Directions:
- Spread mustard on one piece of toast
- Add lettuce, chicken, bell pepper and cheese. Place under broiler or in toaster oven and cook 20-30 seconds, or until cheese is melted to taste.
- When done heating, top with second piece of toast and serve immediately while hot.
